Larry Metz founded LEM in 1996 drawing on 35 years of experience as a meat cutter with one of the largest foodservice company’s in the United States. An avid hunter, Larry’s knowledge of processing and a love of the outdoors led him to establish a big game processing business in the 1980s. During this time he developed an innovative “Bone Out” method of processing that produced custom cuts with great flavor resulting in a thriving business.
In 1991, in response to many clients’ requests, Larry produced a How To Video called “Deer Processing From Field to Table”, effectively launching the LEM Brand. The popularity of the video spurred Larry and his team to develop an entire line of equipment, supplies and seasonings to meet the varied needs and tastes of big game hunters everywhere.
